I had the opportunity to taste the Dragonglass Black Series Edition and Limited Edition cuvées. 100% tempranillo, ungrafted vines. Vines are 100 years old or even more, some of which are pre-phylloxera, with an average age of over 130 years. These wines are vibrant, huge, and highly emotional. Perfectly balanced, they are gorgeously loaded with intense fruit, a very subtle élevage and a long, silky finish.

My experience with the Dragonglass 2018 and 2019 Limited Edition wines at the Amalia restaurant in Barcelona was memorable. The bottles were already open when I arrived, which allowed to immediately appreciate the subtle but intense aromas of both wines. In the nose, each one offered a complexity that invited to discover every nuance.
Although both were exceptional, my favorite was the 2019, standing out among the tasting table where, curiously, prevailed the 2018. As for the pairing, each glass raised the flavors of rice and pork and beef meat proteins, achieving a perfect harmony that enriched each dish.
I take this opportunity to thank the expert sommelier and brand ambassador, Roberto Uzcátegui, for his masterclass and impeccable organization of the event, which undoubtedly enriched the experience and allowed us to enjoy these extraordinary wines.

Over the Singapore Grand Prix weekend, I settled into a long lunch with Roberto and Trevor to sample some of their new DG Blends. To pair with the DG 2018 Limited, I sourced a 62-day dry-aged Australian Wagyu sirloin which I sauced with a classic Dianne sauce. Out of this world.
The softened tannins of the 2018 DG married perfectly with the complex, sweet, aged funk of the 62-day aged steak. The result: a cacophony of strong, rounded flavours and a seemingly everlasting finish.
